Small town of Marysville set to make big impression on Victoria’s regional dining

Each is expected to have a significant, positive impact on the local community: with a primary focus on supporting local people and businesses, Radius is expected to create 30 part time and casual jobs while driving tourism to the area with its unparalleled food offering of the region’s best produce. Radius will play an important role by bringing travellers and tourists to the town, five years after the devastating bushfires of Black Saturday.

Radius Bar & Grill’s Executive Chef Leigh Colville – formerly of Chateau Yering, The Press Club, St Katherine’s (now Hellenic Republic) and Shane Delia’s Maha – grew up in the Yarra Valley. Leigh returns to the area where his obsession with food began. 

“Having the opportunity to work with top-notch seasonal ingredients from the Yarra Valley every day will be the driving force behind my creative inspiration. This allows me to adopt a more back-to-basics approach, letting the produce be the superstar,” Leigh said.  

In addition, Colville’s ties with the region have enabled him to cultivate strong, personal relationships with many local producers, giving him an edge over chefs who rely on intermediaries to supply their products.

“Working with local farmers and growers directly means quality at Radius will never be compromised; just the freshest of ingredients hand-selected by me or delivered directly to our door each day, with the added benefit of supporting our local businesses and economy.”

And local it is – the name Radius is a playful tribute to the restaurant’s 85% locally sourced produce within a 100km radius of the venue.

Serving modern Australian cuisine, Radius Bar & Grill will deliver food that is simple and fresh with a focus on slow cooked meats over a wood flame. 

Blackmore Wagyu beef, Killara Rise lamb and whole cuts of pork will be cooked over a wood fire grill and wood fire rotisserie, which will also be used to house-smoke Buxton Trout. House made sourdough-based pizzas will be baked in a custom-made stone pizza oven.

Over at Radius Café, local ingredients will be sandwiched between slices of freshly baked bread produced in-house.

Located in the heart of town, Radius is expected to add character to Marysville, shining a spotlight on the best in food and wine the region has to offer.
