REDFERN: As Sydney slides into the summer months, boutique luxury hotel, The EVE, invites guests to make the most of the city’s golden days and balmy nights with a curated program of new culinary, wellness and festive experiences across its rooftop and surrounds in Wunderlich Lane.

From a brand–new poolside menu by Lottie, to a rejuvenating IKKARI wellness ritual for guests to experience poolside and in–room, a partnership with Redfern–based Scout Studios to host wellness experiences, and an indulgent New Year’s Eve stay and dine package with Olympus, The EVE will be a playground for guests looking to live well this summer.
The Flavour of an EVE Summer: Lottie introduces a new poolside dining experience for long golden days:
Perched high above Surry Hills and Redfern, Lottie – The EVE’s contemporary rooftop Mexican restaurant and mezcaleria – has introduced a new poolside menu exclusive for hotel guests to enjoy as they laze by the 20m pool from mid–morning to sunset. Created by Lottie Head Chef Joe Valero, the Mexican–driven menu is fresh, light and designed for languid afternoons soaking up the best of Sydney’s summer.
Between 10:30am and 12pm, dishes such as watermelon and frozen grapes dusted with house tajin, cardamom and fennel granola with sheep’s yoghurt, fresh pastries from Redfern’s Breadfern Bakery, and spicy cheese quesadillas are on the menu.
As the afternoon unfolds between 12pm and 7pm, you'll find Lottie’s much–loved guacamole with house–made tortilla chips, a blue fin tuna tostada with tomatillo, salsa brava, samphire, and cucumber, a very pretty coral trout ceviche with watermelon, hibiscus, radish and sour cream, and buckets of tiger prawns with chipotle mayo on the menu.
Moving through to more substantial eats, Lottie is serving up burritos including a roasted chicken tinga, pickled corn and capsicum, and aji verde, another with pulled pork neck with Cochinita Pibil marinade, pickled cactus & fennel, and chipotle mayo, and a vegetarian option with refried beans, Oaxacan cheese, pickled corn and shiso salsa. Burritos can also be made into bowls, served with quinoa and topped avocado, radish and fresh herbs.
To complete the menu, guests can pair their poolside eats with cocktails from Lottie’s mezcalería. Favourites include the Lottie Paloma, blending Tromba Blanco tequila with ruby grapefruit and Unico Zelo Pomelo Vermouth, the Margarita Picanté, a spicy, smoky mix of Empirical Spirits ‘Ayuuk’ mezcal, chile de arbol and chipotle, and the punchy Ranch Water with Blanco tequila, black lime, coriander, Lost Explorer Espadin mezcal and soda. Those after something lighter can turn to the Yuzu and Peach Spritz, a crisp refresher built for afternoons in the sun, or the Día Clara, a savoury leaning cocktail where mezcal meets watermelon and fortified wine. There’s also non–alcoholic options including the Pal–No–Ma which is a ruby grapefruit highball with Lyre’s Agave Blanco Spirit, and the Agua de Jamaica made up of hibiscus and citrus fizz.
Rest, Reset and Revive: IKKARI Rituals poolside at The EVE:
In partnership with wellness partner, IKKARI, The EVE introduces complimentary IKKARI wellness tonics to its rooftop and guest experience this summer. Available poolside, guests can enjoy a curated tonic menu featuring two signature blends:the apple and ginger flavoured Detox Support tonic with milk thistle, dandelion and broccoli to restore liver function and support detoxification, and the pomegranate and berry flavoured Radiance tonic with marine collagen, elderberries and gutu kola to nourish and strengthen skin, hair, nails and immunity. Served with still or sparkling water, the tonics offer the perfect way for guests to stay balanced and hydrated on long, sun–soaked days.
Completing the wellness experience, IKKARI’s Deep Sleep to–go Tonic sachets will be provided during evening turndown – a calming blend of blue Lotus, tart cherry, L–theanine and ashwagandga designed to soothe the nervous system and promote deeper sleep cycles.
Sunrise Rituals: Scout Studios x The EVE Poolside Wellness:
Over summer, The EVE is partnering with Scout Studios to deliver a thoughtfully curated wellness program offering expert–led mat classes to guests. An independent and design–led wellness studio with locations in Redfern, Marrickville and St Peters, Scout will lead three energising Sunrise Ritual sessions a week poolside on The EVE rooftop that blend flow, breath, and strength. Wednesday mornings showcase Flow – a signature Scout yoga and Pilates class that’s fluid, energising and open to all levels. On Fridays, Scout will host Chill – a guided breathwork and stretch class with gentle movement incorporated throughout. Saturday mornings will be an energising Strength class of either power Pilates or power yoga dependent on the day. Classes all run for 45 minutes.
Sunrise Rituals commence at 7am on Wednesdays, Fridays and Saturdays through all summer long and are exclusive and complimentary for guests of The EVE. Bookings required via an in–room QR code.
Additionally, The EVE in partnership with Scout Studios is pleased to offer its guests complimentary access to Scout Redfern’s in–studio classes including reformer & mat Pilates, yoga and barre as well as sauna and contrast therapy sessions. Scout Redfern is a 12–minute walk from The EVE at 245 Chalmers St, Redfern.
The EVE x Olympus New Year’s Eve:
To close out 2025, The EVE and Olympus Dining have partnered on a New Year’s Eve package that pairs luxury accommodation with a vibrant and generous Greek–inspired feast by Olympus’ Head Chef, Ozge Kalvo. Usher in the new year with Olympus’ celebrated food and drink under the oculus and the lush bougainvillea. Guests will enjoy a glass of Louis Roederer ‘Collection 245’ Champagne on arrival, a five–course menu for two including Sydney Rock Oysters with persimmon vinegar and charcoal–grilled market fish, and two nights of luxury accommodation at The EVE for this one–of–kind Sydney New Years Eve celebration.

Summer Revelry - A sun–drenched escape at The EVE:
For guests looking to stretch out the long days of the season, The EVE introduces Summer Revelry – a stay experience designed for sun seekers, culture lovers and those who really want to lean into the effortless sophistication of Sydney in summer. The experience includes a complimentary upgrade to a Sunset Balcony Room, access to the hotel’s 20m rooftop pool, and the freedom to move between Lottie, Bar Julius the hotel’s poolside and in–room dining at your own pace. With a daily $100 dining credit to use across the hotel’s venues including in–room dining, guests can shape their stay around poolside cocktails, long lunches, and relaxed golden evenings on the balconies.
